Carrot Cake

Ingredients

Cake

2 cups powdered sugar

4 eggs

2 cups oil

1 teaspoon vanilla

2 ¾ cups Makhsous Flour

3 tablespoons baking powder

1 tablespoon cinnamon

2 cups grated carrots

 

Cream cheese frosting

2 cups cream cheese

4 cups powdered sugar

1 teaspoon lemon or lime juice

Directions

  • In a large mixing bowl, whisk together the powdered sugar, eggs, oil, and vanilla.
  • In another bowl, mix Makhsous Flour together with the baking powder and cinnamon.
  • Pour the wet ingredients into the dry ones and mix until well combined.
  • Mix in the grated carrots.
  • Pour the batter evenly between 2 buttered or oiled pans.
  • Bake at 180C for 50 minutes.
  • To make the frosting, beat the cream cheese, powdered sugar, and lime or lemon juice until smooth.
  • Assembles the cakes by topping each cake with frosting and placing them over each other, and serve.
